Hearty Breakfast Hash | Serves 1-2
Recipe can easily be scaled to serve more
3-4 mushrooms, sliced
4-5 stems of kale, thinly sliced | *broccoli greens are a delicious substitute
1-2 small sweet potatoes, diced
lemon juice + salt
salt+pepper to taste
1) Preheat skillet to medium heat. Add 1teaspoon olive oil.
2) Add diced sweet potatoes to skillet and season with salt + pepper; let brown 2-3 minutes. In a small bowl, massage the thinly sliced kale with 1/2 teaspoon lemon juice and a small pinch of salt. This step is key to helping your body absorb the nutrients in kale.
3) Stir the sweet potatoes and add the sliced mushrooms. Let cook for 2-3 minutes. Add the kale and saute for 1 minute.
4) Serve immediately with your favorite eggs – poached, scrambled, fried, or soft boiled!
